Chicken Caesar Wraps

Ingredients
  

  • 3 cups chopped romaine lettuce washed and thoroughly dried
  • 1 1/2 cups chopped cooked chicken grilled, baked, pan-fried, or rotisserie chicken (skin removed), cooled
  • 1/3 cup Caesar dressing store-bought or homemade
  • 1/3 cup freshly grated Parmesan cheese plus more for serving (optional)
  • 1/2 cup homemade croutons or store-bought croutons (smaller size recommended)
  • Kosher salt and freshly ground black pepper to taste
  • 4 flour tortillas or wraps 10-inch diameter (whole wheat, spinach, or gluten-free wraps can be substituted)

Instructions
 

  • Step 1: Prepare the Caesar Salad Mixture:
  • In a large bowl, combine the chopped romaine lettuce, chopped cooked chicken, Caesar dressing, and freshly grated Parmesan cheese. Gently toss all ingredients together using tongs or a large spoon, ensuring that the lettuce is evenly coated with the dressing. Be careful not to overdress the salad, as it can make the wraps soggy.
  • Step 2: Add the Croutons:
  • Add the croutons to the bowl with the lettuce and chicken mixture. Gently toss again to distribute the croutons evenly throughout the salad. Add the croutons just before assembling the wraps to prevent them from getting soggy.
  • Step 3: Season to Taste:
  • Season the Caesar salad mixture with kosher salt and freshly ground black pepper to taste. Start with a small amount of salt and pepper, and then taste and adjust as needed. Keep in mind that Caesar dressing and Parmesan cheese can already be quite salty. If the mixture seems a little dry, you can add a small amount of extra Caesar dressing, one tablespoon at a time, until it reaches your desired consistency.
  • Step 4: Warm the Tortillas:
  • Warm the flour tortillas to make them more pliable and easier to roll. You can warm them in a large skillet over medium heat for about 15 to 30 seconds per side, until they are soft and flexible. Alternatively, you can warm them in the microwave by stacking them between two damp paper towels and microwaving for 15 to 30 seconds.
  • Step 5: Assemble the Wraps:
  • Place the warmed tortillas on a clean, flat surface. Divide the Caesar salad mixture evenly between the four tortillas, placing it in the center of each tortilla. Be careful not to overfill the tortillas, as this can make them difficult to roll and can cause them to tear. Fold in opposite sides of each tortilla towards the center, and then tightly roll up each tortilla, burrito-style, starting from the bottom. If desired, secure the wraps with toothpicks to help keep them closed, especially if they are very full.
