Step 1: Combine Yogurt Mixture
In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until all the ingredients are well incorporated. Step 3: Freeze Yogurt Clusters
Place the baking sheet with the yogurt clusters in the freezer. Freeze until the clusters are completely frozen and solid, which should take about 1-2 hours. The freezing time may vary depending on the temperature of your freezer. To ensure that the clusters are fully frozen, check them after an hour and if they are still soft, continue freezing for another 30-60 minutes. The clusters should be firm and easy to handle once they are completely frozen.
Step 4: Melt the Chocolate
Once the yogurt clusters are frozen, it's time to melt the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15-second intervals, stirring in between each interval, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate, as it can burn easily. If you don't have a microwave, you can melt the chocolate in a double boiler on the stovetop. Simply place the chocolate and coconut oil in a heat-safe bowl set over a pot of simmering water, and stir until melted and smooth.
Step 5: Dip and Freeze
Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate, ensuring that it is thoroughly coated. You can also use a fork to dip the clusters, but a spoon will provide better coverage. Once each cluster is coated with chocolate, place it back on the prepared baking sheet. At this point, you can add a sprinkle of sea salt to each cluster, if desired. The sea salt will enhance the sweetness of the chocolate and add a delightful savory contrast.
Place the chocolate-covered clusters back in the freezer for a few minutes (about 5-10 minutes) to allow the chocolate to harden and the yogurt to solidify slightly.
