Ingredients
  

  • 1 1/2 cups chopped fresh strawberries: Opt for ripe juicy strawberries for the best flavor. Wash them thoroughly and chop them into small, bite-sized pieces. You can also substitute other berries like raspberries, blueberries, or blackberries.
  • 1 cup plain Greek yogurt: Greek yogurt is the star of this recipe providing a creamy texture and a healthy dose of protein. Make sure to use plain, unsweetened Greek yogurt to control the sweetness level. Full-fat or low-fat yogurt will both work well, depending on your preference.
  • 1 tbsp honey: Honey adds a touch of natural sweetness and enhances the overall flavor of the clusters. You can adjust the amount of honey to your liking or substitute it with maple syrup or agave nectar.
  • 1 tsp vanilla extract: A splash of vanilla extract adds a warm aromatic note to the yogurt mixture. Use pure vanilla extract for the best flavor.
  • 1 cup semi-sweet chocolate chips: The chocolate coating is what makes these clusters truly irresistible. Semi-sweet chocolate chips provide the perfect balance of sweetness and richness. You can also use dark chocolate milk chocolate, or even white chocolate, depending on your preference.
  • 2 tbsp coconut oil: Coconut oil helps to melt the chocolate smoothly and gives it a glossy finish. It also adds a subtle coconut flavor that complements the other ingredients. You can substitute it with vegetable oil or butter if you prefer.
  • Optional: Sea Salt: A sprinkle of sea salt enhances the sweetness and adds a sophisticated touch to the chocolate-covered clusters.

  • Step 1: Combine Yogurt Mixture
  • In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until all the ingredients are well incorporated. Make sure the strawberries are evenly distributed throughout the yogurt mixture. This step ensures that each cluster will have the perfect balance of yogurt and fruit.
  • Step 2: Form Yogurt Clusters
  • Line a baking sheet or a large plate with parchment paper. This will prevent the clusters from sticking to the surface and make them easy to remove once frozen. Using a spoon or a small ice cream scoop, add scoops of the yogurt mixture (about 2 tablespoons) to the parchment-lined baking sheet, forming individual clusters. You should be able to make approximately 10 clusters, depending on the size of your scoops. Arrange the clusters evenly on the baking sheet, leaving some space between them to prevent them from sticking together.
  • Step 3: Freeze Yogurt Clusters
  • Place the baking sheet with the yogurt clusters in the freezer. Freeze until the clusters are completely frozen and solid, which should take about 1-2 hours. The freezing time may vary depending on the temperature of your freezer. To ensure that the clusters are fully frozen, check them after an hour and if they are still soft, continue freezing for another 30-60 minutes. The clusters should be firm and easy to handle once they are completely frozen.
  • Step 4: Melt the Chocolate
  • Once the yogurt clusters are frozen, it's time to melt the chocolate. Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 15-second intervals, stirring in between each interval, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate, as it can burn easily. If you don't have a microwave, you can melt the chocolate in a double boiler on the stovetop. Simply place the chocolate and coconut oil in a heat-safe bowl set over a pot of simmering water, and stir until melted and smooth.
  • Step 5: Dip and Freeze
  • Remove the frozen yogurt clusters from the freezer. Using a spoon, carefully dip each cluster into the melted chocolate, ensuring that it is thoroughly coated. You can also use a fork to dip the clusters, but a spoon will provide better coverage. Once each cluster is coated with chocolate, place it back on the prepared baking sheet. At this point, you can add a sprinkle of sea salt to each cluster, if desired. The sea salt will enhance the sweetness of the chocolate and add a delightful savory contrast.
  • Place the chocolate-covered clusters back in the freezer for a few minutes (about 5-10 minutes) to allow the chocolate to harden and the yogurt to solidify slightly. This will make the clusters easier to handle and prevent the chocolate from melting too quickly. Once the chocolate is set, the clusters are ready to be enjoyed!
