  • Step 1: Prepare the Chicken:
  • Begin by patting the chicken breasts or thighs dry with paper towels. This step is essential for achieving a good sear and preventing the chicken from steaming in the pan.
  • In a small bowl, combine the garlic powder, paprika, salt, and pepper. Mix well to ensure even distribution of the spices.
  • Generously season both sides of the chicken with the spice mixture. Gently massage the spices into the chicken to ensure they adhere properly. This step infuses the chicken with flavor and helps to create a delicious crust during cooking.
  • Step 2: Cook the Chicken:
  • Heat olive oil or butter in a large skillet (cast iron or stainless steel work best) over medium-high heat. Make sure the skillet is hot before adding the chicken to ensure a good sear.
  • Carefully place the seasoned chicken breasts or thighs in the hot skillet, making sure not to overcrowd the pan. Work in batches if necessary to maintain optimal searing temperature.

  • Step 3: Make the Sauce:
  • In the same skillet, melt the butter over medium heat. The browned bits left in the pan from cooking the chicken will add depth and flavor to the sauce.
  • Add the minced garlic to the skillet and sauté for 1–2 minutes, or until fragrant. Be careful not to burn the garlic, as it can become bitter. Stir frequently to prevent sticking.
  • Pour in the chicken broth, stirring to deglaze the pan and scrape up any browned bits from the bottom. These browned bits, known as fond, are packed with flavor and will enhance the sauce.
  • Simmer for 2–3 minutes, allowing the broth to reduce slightly and intensify in flavor.
  • Step 4: Creamify the Sauce:
  • Reduce the heat to low. This is crucial to prevent the cream from curdling.
  • Stir in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Combine all ingredients thoroughly.
  • Cook for 3–4 minutes, stirring occasionally, until the sauce thickens slightly and becomes creamy. The Parmesan cheese will melt and emulsify with the cream, creating a luscious and velvety texture. Be careful not to boil the sauce, as it may separate.
