Step 1: Prepare the Pancake Batter
Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, sugar, baking powder, and salt. This ensures the baking powder is evenly distributed, leading to light and fluffy pancakes. The sugar not only adds sweetness but also helps with browning during cooking. The salt balances the sweetness and enhances the overall flavor profile.
Add Wet Ingredients: In a separate bowl, whisk together the egg, milk, melted butter, vanilla extract, and maple syrup. The egg acts as a binder, while the milk provides moisture. Melted butter adds richness and tenderness to the pancakes. Vanilla extract enhances the overall aroma and flavor, while maple syrup provides that signature McGriddle sweetness right in the batter.
Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing the batter, as this can develop the gluten in the flour, resulting in tough pancakes. It's perfectly okay to have a few lumps remaining in the batter; they will disappear during cooking.
Let it Rest: Allow the batter to sit for 5-10 minutes while you prepare the filling and cooking area. This resting period allows the flour to fully absorb the liquid, resulting in a more tender and cohesive pancake. Also, this resting period provides time for the gluten in the flour to relax, resulting in a more tender pancake.
Step 2: Cook the Pancakes
Heat the Griddle: Preheat a large skillet or griddle over medium heat. The temperature should be hot enough to cook the pancakes evenly without burning them. A non-stick skillet is recommended for best results, but a well-seasoned cast iron skillet also works beautifully.
Grease the Surface: Lightly grease the surface with butter. Butter adds flavor and prevents the pancakes from sticking. Alternatively, you can use cooking spray, but butter provides a richer taste and better browning.
Pour and Cook: Pour approximately ¼ cup of the pancake batter onto the hot griddle for each pancake. Leave some space between the pancakes to allow for spreading during cooking. Cook for 2-3 minutes, or until small bubbles begin to form on the surface and the edges start to look set. These bubbles indicate that the pancakes are ready to be flipped.
Flip and Finish: Flip the pancakes carefully using a spatula and cook for an additional 1-2 minutes, or until golden brown on both sides. The pancakes should be cooked through but still slightly moist on the inside. Overcooking will result in dry, rubbery pancakes.
Keep Warm: Set aside the cooked pancakes on a plate and cover them loosely with foil to keep them warm while you prepare the filling. You can also place them in a warm oven (200°F/95°C) if you're making a large batch.
Step 3: Cook the Sausage Patties
Prepare the Sausages: Cook the Halal chicken or turkey sausage patties in a skillet over medium heat. If using frozen sausages, thaw them according to package instructions before cooking. It is very important to follow the Halal certification of your sausage to be sure you are using the correct ingredients.
Cook Thoroughly: Follow the package instructions for cooking times, or cook for about 5-6 minutes per side, until they are cooked through and browned. The internal temperature of the sausage should reach 165°F (74°C) to ensure they are safe to eat.
Sauté Greens (Optional): If you're adding fresh spinach or arugula, quickly sauté them in the same skillet for 1-2 minutes until wilted. This adds a touch of freshness and nutrients to your McGriddle. Season with a pinch of salt and pepper to taste.
Set Aside: Once cooked, remove the sausage patties from the skillet and set them aside to rest briefly.
Step 4: Assemble the McGriddle
Base Layer: Lay one pancake on a plate or clean surface. This will be the bottom layer of your McGriddle.
Add Filling: Place a sausage patty on top of the pancake, followed by a slice of Halal cheese. Ensure the cheese is placed directly on the hot sausage patty to encourage melting.
Add Greens (Optional): If desired, add a few leaves of sautéed spinach or arugula for extra flavor and texture.
Top it Off: Place another pancake on top, creating a sandwich-like structure. Gently press down on the top pancake to help the filling adhere.
Drizzle with Maple Syrup: Drizzle maple syrup generously over the top of the sandwich, allowing it to seep into the pancakes and filling. Alternatively, you can serve the maple syrup on the side for dipping.
Step 5: Serve and Enjoy
Serve Immediately: These McGriddles are best enjoyed fresh and warm. The pancakes are at their fluffiest, the sausage is juiciest, and the cheese is perfectly melted.
Pairing Suggestions: Serve them with a side of fresh fruit (such as berries or sliced melon) or a cup of coffee to complete your breakfast. A glass of fresh orange juice or a smoothie also complements the flavors of the McGriddle.
