Ingredients
  

  • 2 Black Tea Bags or 2 tsp loose leaf tea: The base of our iced tea. Opt for a good quality black tea with a robust flavor. English Breakfast, Assam, or Ceylon tea varieties work particularly well.
  • 1 Ripe Mango or frozen mango cubes: The star of the show! The riper the mango, the sweeter and more flavorful your iced tea will be. Choose a mango that is fragrant, slightly soft to the touch, and free from bruises. Frozen mango cubes are a convenient alternative, especially when mangoes are out of season.
  • 4 cups Water divided: Water is essential for brewing the tea and creating the mango puree. Use filtered water for the best taste.
  • 2 tbsp Honey or to taste: Honey adds a touch of sweetness and complements the mango flavor beautifully. You can adjust the amount of honey to your liking, or substitute it with other natural sweeteners like agave nectar or maple syrup.
  • Ice: Essential for serving and chilling the iced tea.
  • Optional Garnish: Fresh mango slices mint sprigs, or a lime wedge for an extra touch of elegance.

Instructions
 

  • Step 1: Brew the Black Tea:
  • Bring 2 cups of water to a boil in a kettle or saucepan.
  • Place the tea bags (or loose leaf tea in a tea infuser) into a large pitcher.
  • Pour the boiling water over the tea bags and steep for approximately 10 minutes. Steeping allows the tea to release its full flavor and aroma. Avoid over-steeping, as this can result in a bitter taste. Remove the tea bags or infuser after steeping.
  • Step 2: Prepare the Mango Puree:
  • While the tea is steeping, prepare the mango puree. Peel and dice the ripe mango into small cubes. If using frozen mango cubes, no need to thaw them.
  • In a separate saucepan, heat the remaining 2 cups of water and add the diced mango. Bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and simmer for about 10 minutes, gently mashing the mango with a fork or potato masher as it cooks. This process helps to break down the mango fibers and create a smooth, flavorful puree. The goal is to extract as much flavor as possible from the mango.
  • Step 3: Combine and Sweeten:
  • Carefully strain the mango puree through a fine-mesh sieve into the pitcher containing the brewed tea. This will remove any remaining pulp and create a smoother final product.
  • Add the honey to the pitcher and stir well until it is completely dissolved. Taste the mixture and adjust the amount of honey to your liking.
  • Step 4: Cool and Chill:
  • Allow the iced tea to cool down to room temperature. This will prevent the ice from melting too quickly when you add it later.
  • Once cooled, refrigerate the iced tea for at least 30 minutes to allow the flavors to meld and the tea to chill thoroughly. For best results, chill for several hours or overnight.
  • Step 5: Serve and Enjoy:
  • Fill glasses with ice.
  • Pour the chilled Mango Iced Tea over the ice.
  • Garnish with fresh mango slices, mint sprigs, or a lime wedge, if desired.
