  • 4 fresh salmon fillets 6-8 ounces each, skin on or off, your preference
  • 3 tablespoons lemon juice freshly squeezed is best!
  • 4 cloves garlic minced
  • 3 tablespoons butter melted (or 3 tablespoons olive oil for a healthier option)
  • 2 cups mixed vegetables broccoli florets, asparagus spears, bell pepper slices, cherry tomatoes, zucchini chunks, or any combination you like
  • 1 tablespoon fresh parsley chopped (for garnish, optional)
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • Optional: Red pepper flakes for a touch of heat

  • Step 1: Preheat your oven to 400°F (200°C). This ensures that the salmon and vegetables cook evenly and reach the desired level of tenderness. Make sure your oven rack is positioned in the middle.
  • Step 2: Prepare the lemon garlic butter sauce. In a medium-sized bowl, combine the melted butter (or olive oil), freshly squeezed lemon juice, and minced garlic. Whisk together until well combined. The aroma of the garlic and lemon will start to tantalize your senses! Taste the sauce and adjust the lemon juice or garlic according to your preference. If you like a bit of heat, add a pinch of red pepper flakes to the sauce.
  • Step 3: Prepare the vegetables. Wash and chop your chosen vegetables into bite-sized pieces. Ensure that the pieces are roughly the same size so they cook evenly. Toss the vegetables in a separate bowl with a drizzle of olive oil, salt, and pepper. This helps them to roast properly and develop a nice caramelization.
  • Step 4: Arrange the ingredients on the sheet pan. Line a large baking sheet with parchment paper for easy cleanup. Spread the seasoned vegetables evenly on the sheet pan. Place the salmon fillets on top of the vegetables, spacing them apart to allow for even cooking. Pat the salmon fillets dry with a paper towel before placing them on the sheet pan, this helps to achieve a nice sear.
  • Step 5: Drizzle and season. Generously drizzle the lemon garlic butter sauce over the salmon fillets and the vegetables, ensuring that everything is well coated. Season the salmon fillets with salt and pepper to taste. If you're using skin-on salmon, make sure to season the skin side as well.
  • Step 6: Bake. Carefully transfer the sheet pan to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The cooking time will vary depending on the thickness of the salmon fillets and the type of vegetables you're using. The vegetables should be tender-crisp and slightly caramelized around the edges.
  • Step 7: Garnish and serve. Once the salmon and vegetables are cooked to perfection, remove the sheet pan from the oven. Garnish with freshly chopped parsley, if desired. Serve immediately and enjoy!
